If you are like me, I bet you are feeling like it’s time to clean up your eating so I pulled this Salad and Balsamic Dressing Recipe together to help you ring in 2015 with clean eating.
I think it is great to have balance, especially around the holidays. Too much restriction in your nutrition plan is no way to live. I hope you enjoyed some favorite treats, and that you even dabbled in creating them with unrefined sugars, flours or even made them grain-free!
Whatever you chose, remember – no guilt! Enjoy those moments with family, friends and tradition and make different choices at your next meal. Try not to let it create a downward spiral into poor choices at every meal and you will be all good.
I love this recipe and have been meaning to share it. I have tested the dressing a few times, and simply love it! The salad was very simple:
- Organic Mixed Greens
- Diced Avocado
- Sliced Roasted Beets
- Sunflower Seeds (preferable soaked and then dehydrated)
- Goat cheese and even sliced apples, pears or pomegranate would be a nice addition.
- Toss it all in the Balsamic Vinegar Dressing recipe below, and enjoy!

This salad dressing is so easy to pull together with ingredients you most likely have on hand. Why would you ever want to buy store bought again? Try it out and as always let me know how it turns out.

- 1-2 cloves Organic Garlic I did 2. I like garlic 🙂
- 1/2 lemon Fresh lemon juice organic
- 1/4 lemon Zest organic
- 1 pinch Celtic Sea Salt
- 1 pinch Black Pepper
- 1 tsp Raw Honey
- 1 tsp Dijon mustard
- 1 1/2 tbsp Balsamic Vinegar organic
- 1/2 cup olive oil extra virgin
- Place all of the ingredients in a jar that an immersion blender will fit in. If you do not have an immersion blender, use a small food processor or regular blender. Blend it together. Doesn't get any easier!!!
