Easy Crock Pot Rotisserie Chicken and Homemade Chicken Stock
This is incredibly easy and can be prepared and then used in multiple recipes throughout the week. Times may vary, depending on your Crock Pot. I found cooking it as Lisa mentioned was too long. I cook the chicken on high for 3 hours. Below you will find directions for both the ‘rotisserie chicken’ and the broth. I did not list the broth ingredients; use what you have on hand such as a whole carrot, 2 celery stalks, Bay Leaf, Peppercorns, and anything else you like. Enjoy!

  1. Cut up the onion and place in the bottom of your Crock Pot.
  2. Take the whole chicken out of the package and place on top of the onions in the Crock Pot.
  3. Sprinkle with salt and pepper to your liking. You can also sprinkle some of your other favorite seasonings or try Lisa’s rub from her site.
  4. Put the lid on your Crock Pot and set for 3 hours on high, or 6 hours on low. Easy! 🙂
  5. Here is your Crock Pot Rotisserie Chicken! Yum! By the way, the onions that got cooked for hours are so delicious you will gobble them right up!
  6. To make the broth, let the chicken cool and ‘pluck’ or slice the meat from the chicken. Then serve or store it for later. Place all the remaining bones and skin back into the pot. Fill the pot with filtered water to cover the bones. Add scraps from your veggie drawer – like 2 chopped carrots, 2 celery stalks. Then add a small sprinkling of peppercorns and a Bay leaf and 2 Tbsp of Apple Cider Vinegar to draw out the minerals from the bones. Place the lid on top and set on low for 16-18 hours. Strain and store the broth for use later on.
