Okay guys, I have promised to share this Summery Tarragon Chicken Salad recipe a gagillion times and now I am!!! Summer is here, so perfect timing – right?
You see, I often make recipes without really measuring. I know, I am sorry. Every time I would go to make this, I would throw it together, take photos and be like, “Dang it! I forgot to measure again!” Well, not this time. I measured for you. You’re welcome. No, really. Every one that eats this chicken salad LOVES it! If you don’t like Tarragon, we can’t be friends. Just kidding, I still love you. But it is SO flippin’ good in this! Maybe give it another shot? OR omit it and just don’t tell me about it 🙂

Finely Chop the celery stalk and the 1/4 cup of red onion (this is usually 1/4 of an onion for me).
Mince the Tarragon. It does not have to be perfect, but you don't want a whole leaf of it in the salad 🙂
Next, dice the chicken into bite size pieces.
Measure out 1/3 cup of mayo and add that in - It is great if you can make and use homemade (recipe and video of how easy coming soon!). Primal Kitchen makes a clean version with avocado oil.
Now, dice the grapes. You can halve them or quarter them - it really depends on the size of grape. I like to use red grapes for color and sweetness. 21 DSD'ers - simply omit the grapes and this is #21DSD compliant.
Of note - you really want to try to choose organic here. Conventional are one of the top fruits sprayed heavily with pesticides. If you can't, I understand and have been there many times. I try to do a white vinegar and water soak on them for a little bit to cut some of the gunk off.
Add a pinch or two of Celtic Sea Salt or Real Salt and Pepper to taste. Some of you like more, some less. 🙂 Fold it all together and try, try, try not to eat it all in one sitting! 🙂
